Dried veal meat

Cabannina veal dry meat is a true gastronomic rarity, produced with Cabannina cow meat, the only native bovine breed of the Aveto Valley, safeguarded and promoted by a few breeders who are custodians of the territory.

The animals are raised extensively and naturally by the Casaleggi Company, among the green pastures and clean air of the Alta Val d'Aveto, in the municipality of Rezzoaglio. The supply chain is entirely controlled: the company takes care of the breeding, the on-site slaughtering and the artisanal processing, with a slow natural drying that enhances the unique flavor of this fine meat.

The result is a dry meat with a strong but balanced aroma, with a very high protein value, produced without preservatives or additives. A genuine, refined product, which carries with it the profound identity of a territory.
