Taggiasca olives in brine are a true excellence of the Ligurian tradition, grown in small terraced olive groves, hand-picked and patiently processed according to the traditional method.
Immediately after harvesting, the olives are placed in natural brine (water and sea salt) for weeks, until they lose their bitterness while maintaining a firm consistency and delicate flavour, with an almondy and aromatic aftertaste typical of the Taggiasca variety.
The Taggiasca variety is known for its sweetness and versatility, perfect for appetizers, condiments, sauces, focaccias, salads and main courses.
